I stopped at the store on my way home from work to stock up on some grillable veggies...peppers, onions, zucchini and asparagus are some of our favorites.
As soon as I got home I got to work. So there I was, prepping like a mad woman, knowing the whole time I didn't have to cook because I had already agreed to a "Survivor season premiere pizza" - yes, it is a thing just ask the pizza monster I lovingly refer to as my husband.
While I "manned" the grill, my husband played frisbee with Millie...she loved it. However, she did not love the paw-washing she had to endure before she came in :( The yard is a muddy mess.
What am I going to do with all those grilled veggies??
Don't worry, I had plans. First up, the other day Mary at Runs to Get Waisted posted a picture of a quinoa salad she made. I have been dreaming of that salad since she posted it last week. I thought the grilled veggies would be perfect. I chopped some of the veggies in bite sized pieces to make a chunky salad like my inspiration salad.
I had some leftover pineapple from our homemade pizza so I chopped a little into the salad. It is pretty tasty as is, but I have some strawberry vinaigrette at work that I am going to try with it tomorrow.
In addition to all the grillable veggies I bought some lettuce and spinach.
So. while I was at the grill I tossed on a couple of chicken breasts to use in salads.
I chopped the rest of the grilled veggies into smaller pieces to use in my egg muffins. We really like broccoli in our egg muffins so I steamed a batch to add to the grilled veggies.
I used a dozen eggs - keeping only 4 of the yolks. Yes, it trims the calorie count, but we also just like less yolk in the egg muffins.
I topped the muffins with a little turkey sausage and a sprinkle of sharp cheddar.
That is some serious veg!! I am pretty sure I will be having a couple in a wrap for breakfast.
I apologize for featuring the egg muffins again...I just got on a roll with the grilled veggie theme. Overall, I am pretty impressed with myself. I came home from a long day at work and prepared many delicious, healthy meals.
And now it is time to watch Survivor and eat a reasonable portion of that pizza :) (Morning update: I ate two pieces and was satisfied.)

Oh those muffins look delicious! Can I put a request in for you to make them for us for #LLLRetreat? haha (I'll totally clean the kitchen after!) Looks like that little burst of warm weather was good for you to get some grilling in!

That stinks about your tummy and eggs. Sometimes they bother me, but I think so many veggies helps me.

ReplyDeleteThe veggies and quinoa were fantastic. But I didn't love the dressing. I actually ate it plain the next day with some grilled chicken and it was great.
DeleteI love the idea of grilling up a ton of veggies while the weather is good. We grill them all the time to eat with dinner but I never think of adding extras to use later in the week.
ReplyDeleteHaving all those veggies grilled definitely inspired me. This was the first time I did such a purposeful bunch and I already want to do it again. I usually just throw on a little extra which works well too.
